Water is then slowly poured by a carafe in small increments. With a small hole in the middle of the bottom of the dripper, allowing the cold water to slowly dissolve the sugar. The sugary mixture falls through the holes in the tray and into the glass of absinthe below. The sweetness and strength of alcohol are dependent on the preparer's own liking.
